Yellu Bella Chutney Pudi is a garlic chutney powder, spicy , sweet and very addictive made using left over Yellu Bella after Sankranti. Sankranti is over! Yellu Bella from everyone has reached us. Sometimes when you have so many variations of Yellu Bella, it doesn’t make sense to mix it all up. We mix the ones with similar sized ingredients , store it and consume it over a month. The remaining Yellu Bella, we make it into this absolutely addictive, garlicy Yellu Bella Chutney Pudi. I love having spoonful of Yellu Bella Chutney Pudi from the
jar kept in the kitchen every now and then, and this one, I can’t seem to stop. These are recipes that Amma comes up with left overs to avoid wastage and we end up looking forward to it every year. Trust me, YOU WILL LOVE IT TOO!!!
Yellu Bella, as you all must have read in my Pongal post is a mixture of Roasted sesame, roasted & peeled
peanuts, roasted gram, dry coconut and jaggery in equal proportion.
Ingredients
2 cups – Yellu Bella mixture
6 to 1 0 – Dry red chillies
1 whole garlic
1 Tbsp of tamarind
Salt to taste
Method
For the Chutney Pudi, pick and discard half of jaggery.
Otherwise the pudi will be very sweet.
Dry roast the red chillies, garlic and little tamarind in a wok till they are crisp.
Add Yellu Bella mixture to this and roast them till they are warm.
Once it cools down, grind it into a coarse powder along with salt.
*Do not grind it too much as the oil from the dry coconut will make the powder too oily and lumpy.
Transfer the powder onto a plate and spread it out and let it air dry for a minute or so.
Store it in an air tight jar.
Stays good for a week, if you can resist yourself that is 🙂
