YELlu Bella Chutney Pudi - Garlic Chutney Powder
- 2 cups - Yellu Bella mixture
- 6 to 1 0 - Dry red chillies
- 1 whole garlic
- 1 Tbsp of tamarind
- Salt to taste
- For the Chutney Pudi, pick and discard half of jaggery.
- Otherwise the pudi will be very sweet.
- Dry roast the red chillies, garlic and little tamarind in a wok till they are crisp.
- Add Yellu Bella mixture to this and roast them till they are warm.
- Once it cools down, grind it into a coarse powder along with salt.
- *Do not grind it too much as the oil from the dry coconut will make the powder too oily and lumpy.
- Transfer the powder onto a plate and spread it out and let it air dry for a minute or so.
- Store it in an air tight jar.
- Stays good for a week, if you can resist yourself that is :)
