Roasted beetroot soup is spicy soup with an extremely strong beet flavour. If you are a fan of beets then this is a soup that you must try. Beetroots are highly nutritious and are a rich source of vitamins and minerals including Vitamin C, potassium, magnesium, manganese and folic acid. The leafy tops are an excellent source of nutrients too. They are also virtually calorie and fat free :D. Beetroot is widely used in South Indian cooking. We make stir fries, curries and halwa. Roasted beetroot soup is a good variation too.
We have been having soup regularly and I am loving every soup. Peas soup, Roasted tomato turmeric soup.
Ingredients
2nos – Beetroot, medium sized
1 Tbsp – Black peppercorns
1 no – Tomato, big sized
1 no – Onion
1 tsp – Roasted cumin seeds
10 cloves – Garlic
2 Tbsp – Olive oil
1/4 cup – Sour yogurt
Salt to taste
Feta cheese or Yogurt, fried garlic for garnish.
Method
Pre heat the oven to 180°C.
Wash and clean the beets, peel them and chop them into cubes.
Put them all in a oven proof dish. Coat it with olive oil and sprinkle some salt and cover the dish with aluminium foil and roast it for an hour or till the beets are soft.
Now to the same dish add chopped tomatoes, onion, garlic, pepper, roasted cumin seeds and roast it till everything is cooked.
Blend everything along with water till smooth.b Sieve it if you like it smooth. My Vitamix blends it into a smooth paste an saves me from sieving totally.
Bring it room temperature.
Blend it with yogurt in a blender again before serving.
Garnish it with some chopped spring onions, yogurt or feta cheese and some fried garlic slices.
