Egg curries are absolute favourite in our house . Hence I keep looking for egg curry recipes. This egg korma is absolutely yummy. Flavoured garam masala and bresta, this egg korma tastes very rustic yet rich. It tastes best when served with laccha paratha. 

This recipe is inspired by Banglar Rannaghor


Ingredients 

6 nos – Hard boiled Eggs

1/4 cup – Ghee

Whole garam masala – 1 bay leaf, 2 cloves, 2 cardamom, 1 inch cinnamon 

1/2 cup – Bresta (deep fried onion)

1/4 – onion paste (boiled onion paste)

1 tbsp – ginger garlic paste 

1/4 cup – Yogurt

1 tbsp – Sugar

1 tbsp – Garam masala

1 tsp – pepper powder

1/2 cup – Milk

2 nos – green chillies slit

4 tbsp – oil

Salt to taste

Coriander for garnishing


Method 

Heat oil in a pan. Prick boiled eggs using a fork. 

Now fry the eggs in the oil till the skin turns gold and crisps up.

Transfer it to a plate and add ghee to the same pan.

Add whole masalas and fry till they let out aroma.

Add onion paste to this and sauté till it turns brown. 

Add yogurt bit by bit and keep stirring to avoid it from curdling.

Once the oil seperates add garam masala and pepper powder.

Cook till oil seperates.

Add the eggs to this a give it a good mix. 

Add milk and boil.

Add bresta and green chillies and cook till the gravy thickens.

Garnish it with coriander leaves.

Service it with Kerala parota, laccha paratha.
