ONE Pot Pesto Pasta – Quick and Easy

One Pot Pesto Pasta is quick Pesto pasta for all of you who have been completely busy managing home, work , kids and family at home during the lock down time. Ingredients

1/2 packet – Spaghetti or any pasta of your choice

1 – Onion, medium sized , chopped

6 cloves – Garlic

6 to 7 – Sun-dried tomatoes  (optional)

1/4 cup – Extra virgin olive oil

1/2 cup –  Basil pesto sauce

1 tsp – Chilly flakes

6 to 7 – Walnuts

1/4 cup – Parmesan shavings

Few fresh basil leaves for garnishing

4 cups of water

Method

In a heavy bottom pan, take spaghetti, half the olive oil, chopped onions, garlic and water.

Cover the lid and let the spaghetti cook. Stir it once or twice so that the spaghetti doesn’t stick to the bottom of the pan.

This should take 10 to 15 mins.

Once the spaghetti is cooked and the water has been soaked completely, switch off the flame.

Add pesto, shredded sun-dried tomatoes, chilly flakes, parmesan cheese, olive oil and give it a good mix.

Check for salt and add if it requires more. Do not add it before as pesto and parmesan cheese has salt in it. Garnish it with some fresh basil leaves.

Serve it hot along with some garlic bread.
