July 28, 2015 Curry

 MALai Egg Curry

Ingredients 

4 nos – Hard boiled eggs
1 no – Onion,big
1 inch – Grated ginger
25 nos – Curry leaves
4 nos – Green chillies
1 tbsp – Garam masala
1 tsp – Mustard seeds
11/2 cup – Milk
Salt to taste
One pinch – Sugar
1 tbsp – Oil

   
Method
Heat oil in a pan. Add mustard seeds to this. Let it crackle. Add curry leaves, chopped green chillies, grated ginger and saute for a minute. Add chopped onion and saute till the onions turn brown.
  

 

Cut boiled eggs into half and add this to the pan. Delicately spread the mixture so that all the eggs touch the pan. Let the eggs brown a little wherever it has touched the pan.Add garam masala and give it a mix. To this now add milk to this, salt and sugar and cover the pan.
Let the mixture boil till it reaches a creamy consistency. Serve with some flaky, melt in the mouth, lacha paratha or roti.
