5 nos – Egg, boiled, peeled and cut into half
2 tbsp – oil
1 no. – Bay leaf
3 nos – Clove
1 inch – Cinnamon
1 no. – Onion
2 nos – Green chilly
1/2 tsp – Haldi
1 tsp – Ginger garlic paste
1/2 cup – Tomato puree
Or
1/4 cup tomato purée +1/4 cup yogurt
1 tbsp – Zaiqa egg masala
Salt to taste
1 tsp – Sugar
1/4 cup – Fried onions
Method
On a tawa spread some oil, place the flat cut side of the egg and roast it till they turn golden brown. Set aside.
In a pan, heat oil. Add bay leaf, clove and cinnamon and let it turn brown (not black). Add finely chopped onions, green chillies, ginger garlic paste and sauté till the onion turns brown. Add a turmeric and mix well. Add tomato purée (and yogurt, incase of using) and mix well. Keep stirring for a couple of minutes, so that the yogurt doesn’t curdle. Cover the pan with a lid and cook till the oil sepearates. Add the eggs and half the fried onions and boil it over low flame for 5 minutes and till the gravy thickens.
Garnish it with coriander leaves and the remaining fried onions. Serve with lacha paratha, roti or rice and with pickled vegetables.
