 This is my Showstopper post this  Christmas. So so loved the variation in it and the flavour. Cinnamon Cookies, scream Christmas. The aroma, the flavour everything is Christmas and winters. These cookies are perfect with Cinnamon tea or All spice tea…

This is my last post for this Christmas….Happy Holidays to you All

  

Ingredients 

120gms – Unsalted Butter,softened completely 

1/2 cup – Castor Sugar

1 egg

2 tsp – Cinnmon Powder

11/2 cups – All purpose flour

1 tbsp. – Cocoa Powder

2 tbsp – Apple Cinnomon Jam ( u can use any lighter jam)

  

Method

.Using a paddle attachement, on medium speed (speed no 4), cream together butter and sugar in the stand mixer, till the mixture turns creamy, fluffy and light. For about 8 minutes. (Like shown in the picture)

. Add egg and beat till combined.

  

. Reduce the speed to 1 and now gradually add the, cinnamon powder and All Purpose Flour. Till everything comes together (Like shown in the picture)

. take out 3/4 of this mixture onto a greased platform, bring it together. Wrap it in a clingfilm. Flatten it into a disk and refrigerate for 15 to 20 minutes.

. Add cocoa powder to the remaining dough in the bowl and mix it on speed 1 till combined well. Remove it, Wrap it in the clingfilm, flatten and refrigerate.

. Preheat the oven to 180degree. Line the cookie sheet with parchment paper.

 

. Remove the dough disks and place them in between two layers of grease proof paper and roll it to a 3mm thick sheet. Cut them using star shaped cookie cutter.
. Place the cut dough on the cookie sheet. Sprinkle some granulated sugar on some,Cut a hole in the centre in some to make vairations.

  

. Bake for 10 to 12 minutes or till they are golden brown and darker at the edges.

. Leave them on the cookie sheet for a couple of minutes and then transfer them onto a cooling rack. let it cool completely and then dust them with icing sugar.

. Fill few cookies with jam and place the cookie with a hole on them

. Serve with some Cinnamon or All spice tea.
