My son very recently tasted the Avocado Milk Shake and he looooovvveeed it. I have no idea why I hadn’t made it for him all these years 🙁 . But anyways!! So I have now started making him Avocado Milkshake more often as his after school drink. And the other thing he loves is the Lotus Biscoff Cookies. Well! what’s there to not love about it. I can completely get addicted to the cookie and the butter as well. So, the other day we thought we will make this Avocado Popsicle with some Lotus Biscoff cookie crumbs combining two of his favourites :).

A quick and simple recipe for the Avocado Chia Seed Popsicle  that he loved making is below :). You may also want to try out strawberry popsicle that we made earlier.

 

Ingredients

Avocado Chia Seed Popsicle is one of the most easiest and fun popsicle you can make. Avocado being creamy in nature makes this popsicle so much more creamier and rich.

1 no – Avocado , well ripened

4tbsp – Sugar

3 tbsp – Cream Cheese or Paneer

250ml – Milk

2tbsp – Chia Seeds

6 to 7 – Lotus Biscoff Cookies, you can use any airy biscuits

Avocado Chia Seed Popsicle is one of the most easiest and fun popsicle you can make. Avocado being creamy in nature makes this popsicle so much more creamier and rich.

Method

To make the Avocado Chia Seed Popsicle scoop the Avocado flesh into the blender jar.

Add sugar, cream cheese, milk and blend it till smooth.

Add soaked chia seeds to it and give it one quick mix.

Now pour this mixture into the popsicle moulds, leaving 1/2 inch gap on top for the crumbs.

Take the cookies in a zip lock bag. Seal it and using a rolling pin , crush the cookies into coarse powder.

Add the biscoff mixture on top of the Avocado mixture in the mould.

Insert the wooden sticks and freeze for at least 4 hours.

To remove the popsicle, insert the mould into a glass of warm water and that will help release the popsicle easily.
