Apple Soup is a creamy soup with a hint of apple flavour to it. A great change from the regular soups. Do try it out this winter.

I am a part Culinary Council of KitchenAid India. And the recipe for Roasted Chana is my contribution to their Blog. Hence i have mostly used KitchenAid Products.

Products featured

Kitchenaid Measuring Cups

KitchenAid Spatula

KitchenAid Cordless Hand Blender

KitchenAid Triply Copperware

Ingredients

1 no – Apple

2 nos – Potatos, medium sized

6 nos – Garlic clove

1 tbsp – Freshly ground pepper

1/2 cup – Milk

2 tbsps – Olive oil

Salt to taste

1 tbsp – Fresh Cream for the top

Pumpkin seeds for topping

Method

In the skillet heat the oil.

Add freshly ground pepper to this. Once it crackles, add chopped garlic.

Let it brown a little.

Add peeled and chopped apple and potato cubes to this.

Saute for a minute.

Cover and cook till the Apple and potato are cooked and soft.

Add salt, milk and a cup of water to this.

Let it just boil for a minute.

Switch off the flame and let it cool a little.

Put the mixture into the cordless blender’s pitcher.

Using an S blade, puree the mixture till smooth.

Pour it into the serving bowls, top it with a dollop of fresh cream, some pumpkin seeds and ground some fresh pepper over it.

Serve it warm.
