Peas soup like most of the soups is quiet easy to make and it is creamy, filling and satisfying at the same time. I usually serve this with a slice or two of garlic bread and our meal it done and this time I served it with some No Knead bread that me and my son made together. Not only does it taste good but also looks pretty :). We at home love having soup at least twice a week and hence I keep using up left over veggies to experiment. Though this is not one of those, we love most of them. My most favourite soup has to be the tomato soups. Basic Tomato soup, Roasted tomato turmeric soup.
Ingredients
2 cups – Fresh or Frozen Peas
1 – Potato, peeled and cubed. medium sized (optional)
3 inch – Leeks (optional)
1 – Onion, big
6 to 7 – Garlic cloves + few to garnish
1 tsp – Freshly ground pepper
2 Tbsp – Fresh cream
or
1/2 cup – Milk
Salt to taste
4 Tbsp – Olive oil
Method
To make the Peas soup, begin by taking oil in a heavy bottomed sauce pan and place it over medium flame.
When the oil is hot, add freshly ground pepper and garlic and let it crisp up.
Now add onion and a pinch of salt and let the onions sweat.
Once the onions have softened add leeks in case you are using them. Sauce it till they soften too.
Add potatoes and peas and sauce it for a min, cover the pan and let it cook for a minute.
Add a cup of water to it and let it cook till the potatoes are cooked and soft.
Let it cool a bit and grind it till it is smooth.
Pour it back into the pan and add salt according to your taste.
Add milk or fresh cream and just heat it up. You don’t need to boil it.
Pour it into individual bowls, top it up with some cream, olive oil, fried garlic and pepper and enjoy it with a slice of bread.
