White Chocolate Barks with Pistachio and Cranberry are one of the most easiest Christmas treats you could make. It takes not more that 5 mins to make it.

Ingredients

500gms – White Chocolate chopped finely or use chips

1/2 cup – Pistachios

1/2 cup – Dried Cranberries

Method

Place the pistachios on a baking tray and roast it for 1/2 hour on 100ºc or till they are crisp. Chop them roughly. Also chop cranberries roughly.

Line a baking tray with parchment paper.

Place a vessel of water on the burner and let it boil.

Finely chop white chocolate and place it in a glass bowl. A glass bowl that can sit on the vessel of water. The bowl  should sit on the rim of the vessel but not touch the water. Only the steam from the water should touch the bowl.

Let the bowl sit for 2 mins and then using a spatula stir the chocolate.

Let it sit till the chocolate has completely melted and is silky and smooth.

Now add the pistachios and cranberries to it. Save just a few to sprinkle on top.

Give it a good mix.

Pour this mixture on the parchment paper. Spread it evenly.

Sprinkle some more finely chopped pistachios and cranberries on it and refrigerate for 1/2 hour to 1 hour.

Once it is set, you can cut them into pieces or break them into chunks. Fill them up in a jar or pack them up for gifting.
