Wash peel and grate fresh ginger. Grind dates, 2Tbsp ginger and salt into paste. Try not to use water to grind. If you are not able to grind it without water then use as less as you can. Transfer it into a bowl. Mix the remaining ginger and lemon juice.  The chutney should have a hit of spice from ginger and should be tangy. Try and adjust that at this stage.
