NIMbehannu Chitranna – Lemon Rice

Ingredients
2 cups – Long grained rice
2 nos – Lemon, medium sized
3 tbsp – Oil
1 tsp – turmeric powder
4 nos – Green chillies
1/2 tsp – Mustard seeds
1 tsp – Urad dal
1 tsp – Chana dal
1 tbsp – Peanuts
10/12 nos – Curry leaves
Salt to taste
1 tsp – Sugar
1/4 cup – Grated coconut
Chopped coriander for garnishing

Optional veggies
1/4 cup -Bell peppers
1/4 cup – Green peas
1 no – Onion medium
4/5 nos – Garlic pods

Method
Cook the rice and spread it and let it cool. Make sure the rice is cooked perfect, seperate and not sticking to each other.
In a wok, heat oil. Add mustard seeds. Let it crackle. Add peanuts, Urad dal, chana dal. Let the dals turn gold in color. Add curry leaves, green chillies, and let the curry leaves crisp up. Add turmeric to this and mix.
At this point add the veggies incase of using. Saute till the veggies soften.
Add the cooked rice , salt, sugar, lemon juice and mix well but lightly taking care not to break the rice.
Add grated coconut and chopped coriander and serve.
