Pasta always doesn’t have to be unhealthy. Pasta doesn’t have to be always made of Maida. Home made Wheat flour Pasta is as good as the All Purpose Flour Pasta. Homemade pastas are out of the world and are just melt in the mouth, super easy, quick and so much more satisfying. Use the KitchenAid’s , Pasta Roller and Cutter Set and you will know how easy it is to make Homemade Pasta and trust me you will never have pasta outside.
Ingredients
For the Béchamel Sauce
1/2 ltr – Milk
2 tbsp – Butter
2 tbsp – All purpose flour
1 no – Small onion
1 no – Bayleaf
3 nos – Cloves
For the Pasta
1.5 cups – Wheat flour
1 tsp – Salt
2 nos – Eggs
1 tbsp. – Olive oil
For tossing
1 cup – Mixed vegetables, julienned (zucchini, bell peppers, mushrooms)
1 bulb – Garlic, peeled and pressed with KitchenAid Garlic Press
2 tbsp – Oregano
Salt to taste
1 tsp – Freshly ground black pepper
1/4 cup – Olive oil
Method
For the Béchamel Sauce
Peel the onion. Keep the onion whole. Wrap it with the bay leaf and secure it using cloves. This is called a cloute.
Heat the milk in a saucepan. When it boils up, add the cloute to this, reduce the flame and let it simmer for 10minutes.
In the meantime, melt the butter in a skillet. Once the butter starts bubbling, add the flour and whisk using a balloon whisk. Whisk till the mixture gets grainy and light brown.
Remove the cloute from the milk and add the flour mixture, whisking continuously. Cook the mixture while whisking till the sauce thickens. It will thicken as it cools so keep it a little liquidy. Set it aside.
For the pasta
Mix wheat flour, salt in the bowl of the Kitchen Aid stand mixer using a dough hook on low speed (speed 1). Add beaten egg gradually. The dough has to be hard. Harder than a roti dough. Knead it for 5 minutes till well done. Add little water if the dough isn’t coming well together. Remove the dough, knead it well on the platform. Cover it with a clingfilm and set aside for 10 minutes.
Fill a deep Saucepan completely with water and get it to boil. Add a tbsp of olive oil to this.
Fix the pasta sheet roller attachment to the standmixer. Fix the setting wide. Lesser than 1. Switch on the mixer at speed 1.
Divide the dough into four parts. Press the dough flat into a rectangular shape.Pass the dough through the roller. Fold it once and roll it again. Repeat this till the dough comes out smooth. Gradually reduce the gap to 1 and continue till 5. The Pasta sheet will be thin and long now.
Attach the Fettuccine attachment and pass the sheet through it. Carefully drop the cut pasta into the boiling water. It will sink in, and within few seconds the pasta will start floating. Give it few more seconds and using Pasta Server, pickup the pasta into a colander. Immediately wash the pasta in running water. Transfer this into a bowl. Drizzle olive oil over it and give it a good mix. Let the pasta get well coated with oil. This will help keep the pasta sticking to each other.
Retain the stock (the water in which you have cooked the pasta) for later use.
In a skillet , add a tbsp of oil. Add crushed garlic, freshly ground black pepper. Sauté till the garlic browns. Add the sliced vegetables and sauté till they are just cooked. They need to be crisp and not over cooked. Add 1/2 cup Béchamel sauce, 1/4 cup pasta water, oregano leaves and let it boil. Add the pasta and mix it well. Transfer it to a serving bowl. Sprinkle more oregano on top. And serve hot.

. Eggless pastas are as good as the egg ones. Use water to knead the dough instead of egg. Make sure the dough is hard and not soft.
