CREamy Carrots

This dish is a nice change from the regular roasted carrots. Simple, quick and a healthy finger food.

Ingredients 

A hanful – Baby carrots 

1/4 cup – hung curd or cream cheese

2 nos – Garlic cloves

1 tsp – olive oil

1 tsp – Red chilly flakes

Salt to taste 

Garlic chives and carrot leaves for garnishing 

 

Method

In a pan heat the oil and add garlic slices to it. Add washed and peeled carrots to this. Add salt, cover the pan with a lid and cook till the carrot is soft but still has a bite to it. Remove from the heat and set aside.

In the meantime, beat hung curd or cream cheese till smooth. Add garlic paste, red chilly flakes, salt and mix well. Add cooked carrots to this and mix it well enough to coat the carrots well.  Serve it in a platter, sprinkle chopped garlic chives, carrot leaves and chilly flakes on top. Serve as finger food or as a side dish
