I got this new juicer and i had to use it. I had few oranges and Kumquat in my fridge. And what better than making a curd, smooth silky, buttery, tangy sweet curd. It can dress up any dessert and can be used in so many ways.
Do check the Lemon curd, lemon curd cookies and Lemon curd tartelettes. You can replace the lemon curd with this one. Give it a try and let me know how you like it.
Ingredients
200gms – Granulated sugar
1/3 cup – Juice ( Orange + Kumquat )
1/2 no – Vanilla pod
100gms – Usalted butter, cut into cubes
3 nos – Eggs
1 no – Egg yolk
Method
Put the Orange zest and juice of orange and Kumquat, sugar, vanilla seeds and the butter into a saucepan . Sit the saucepan over a pan of gently simmering water, making sure the water is not touching the bottom of the saucepan. Stir the mixture until all of the butter has melted completely.
Lightly whisk the eggs and egg yolk in a separate bowl and stir them into the orange mixture. Whisk until all of the ingredients are well combined. Stir continuously and make sure the egg doesn’t curdle.
Then cook for 10 minutes, stirring continuously until the mixture is creamy and thick enough to coat the back of a spoon. Make sure there are no lumps and the curd is smooth and silky.
Remove the curd from the heat and set aside to cool, stirring occasionally as it cools. Once cooled, spoon the curd into an airtight container. Keep it refrigerated until ready to use.
* in case there are lumps in the curd pass it through a seive before it cools.
. The curd thickens as it cools down so stop cooking when it still in a pouring consistency.
