ALMond Lemon Cookies

So this Christmas i am making a box full of cookies and no, not one variety but 6 varieties. Varities of cookies seemed such a great idea rather than just one kind.

Almond Lemon Cookies is the first cookie of this Christmas. . Almond Lemon cookies are crunchy, nutty, tangy cookies. The tang of the lemon gives a very interesting twist to the cookie.

Ingredients 

90gms – Unsalted butter, room temperature 

1 cup – Castor sugar

1 cup – Almond meal

1 cup – All purpose flour

1/2 tsp – Baking powder

2 tbsp – Grated lemon rind

1 tsp – Vanilla extract

1/4 cup – Lemon juice

Icing sugar for dusting

  
Method

. To make Almond Lemon Cookies cream butter and sugar for 3 minutes till it turns creamy and pale in the standmixer or using a handblender 

. Sift together almond meal, flour and baking powder together and add this to the butter mix.

. Add vanilla extract, lemon rind and lemon juice and mix till everything comes together.

. Knead it lightly to form a ball. 

  

 
. Press it and flatten it.

. Place it inbetween two layers of clinfilm and roll it into a 5mm thick sheet.

. Refrigerate for 1/2 an hour. 

. Preheat the oven to 180°c. And line the baking tray with parchment sheet.

. Remove the rolled almond sheet. Cut a 5″ big circle using cookie cutter and using a 1/2″ cutter, make a hole in the centre.

. Bake for 12 to 14 minutes or till the cookies are golden in colour.

. Leave it on the tray for 2 minutes and then transfer them onto the cooling rack. 

. Dust it with icing sugar and store in airtight containers. 

  
*You can even roll the sheets and refrigerate in advance and bake it fresh the day you want.

. Almond meal, is fine Almond powder. It is tough to find it in India. You can find it online. Incase you can not find it, you can make it at home too. (Soak and peel the almonds. Air dry them completely. Using a blender make a fine powder. Seive it few times inbetween while powdering. It should be as fine as possible)
