Summer is here and not only do I not feel like cooking, but also we don’t feel like having anything heavy. Soups are the best solution for such days. Roasted Pumkin Soup, is a simple soup with a very creamy texture and beautiful flavour.
Roasted Pumkin Soup served with a slice of bread is a whole meal by itself. It is filling and light at the same time.
250gms – Pumpkin
1 Pod – Garlic
2 tbsp – Olive oil
1 tsp – Freshly ground black pepper
1 no – Onion, small sized
Salt to taste
Sage leaves (optional)
A pinch of chilly flakes
Method
To start making the Roasted Pumpkin Soup, Preheat the oven to 180°c.
Place the pumpkin, peeled onion, halved garlic in a baking tray. Drizzle olive oil over it. Sprinkle salt and pepper on top and give it a good mix. Add sage leaves incase of using.
Roast it in the oven for half an hour to 45mins, or till the pumkin is soft.
Scoop the pumkin and remove the peel and add this into a blender. Add the onions, garlic and blend it using water till smooth. Pass it through a seive.
Season the Roasted Pumkin Soup again if required and add a spoon of fresh cream to it. Garnish it with some deep fried sage leaves and chilly flakesk. Serve it warm.
