Short bread cookies are these crisp, buttery, coffeey (if i can say that) ?.
My mum had one and asked me if i can pack few for her. I said “Ofcourse i can”. I went into the kitchen and the bottle was empty. My husband who was standing there making tea had finished off the whole lot ??. When asked, he says “they were just too irresistible ?”.
Ingredients
1 cup – Butter, softened
¾ cup – Powdered sugar
1 tsp – Instant coffee powder
2½ cups – All-purpose flour
For the icing
2 tbsp – icing sugar
1 tbsp- instant coffee powder
Brown sugar for sprinkling (i bought something called as coffee sugar. Hence I have used that)
Method
Heat oven to 180°C. Line the baking tray with parchment paper.
In large bowl, beat butter, powdered sugar and coffee powder using a electric mixer.
Stir in flour. Combine well to form a ball.Roll the dough into 1/4 inch thick in between two layers of grease proof paper or clingfilm.
Cut into small rounds using cookie cutters.Place them ½ inch apart on the lined baking tray and bake for 14 to 16 minutes or until the edges are gold and bottoms are golden brown.Remove from cookie sheet to wire rack.
Mix icing sugar, coffee powder with a tsp of water till frothy. Spread the icing over the cooled cookies, sprikle some brown sugar and let it dry till the icing is set.store in an airtight container. Serve with coffee.

Hi dear I think you need the check the recipe. There is something odd as when I tried making yesterday there was too much flour and wasn’t binding it, I had to add milk to it.

Hey Pridhi, the recipe is fine ? this is a recipe I have been using from years. Cream the butter and sugar for atleast 3 minutes and make sure the butter is completely soft. It does seem a little crumbly, just knead it and gather it together and roll it. It will come together. Hope this helps ?
