Ingredients
1 bunch – Baby carrots, or any carrots chopped
2 tbsps – Honey
1 tsp – Olive oil
1 tsp – Red Chilly flakes
Salt to taste
1 tbsp – Rosemary
1 tsp – Garlic Chives
Method
Preheat the oven to 180°c. Line the baking tray with parchment paper.
Clean the carrots well and peel them. Spread them evenly over the parchment paper. Sprinkle chilly flakes, salt over it. Drizzle oil and honey over it. Tear rosemary over it and give it a good mix. Make sure the carrot is well coated with oil and honey.
Roast this in the oven for 25 to 30 minutes till the carrots are soft yet crisp and they have started to caramalise.
Sprinkle some fresh garlic chives over it and serve it as finger food. You could also serve it with yogurt dips.
