Lauki isnt a much loved vegetable in my house. That pushes me to try as many variations with the bottle gourd. Bharwa lauki is one dish that everyone loves and nad now the Lauki Bharta.
This is a very simple dish that goes perfectly with Rotis.
Ingredients
1 no – Lauki / Bottle Gourd
1 no – Onion , Big sized
2 nos – Tomato, medium sized
1 tbsp. – Ginger garlic paste
1 tsp – Jeera
1 tsp – Red Chilly powder
1/2 tsp – Turmeric
1 tbsp. – Garam masala powder
Salt to taste
2 tbsp. – Oil
A pinch of sugar
Coriander leaves for garnishing
Method
Peel the gourd. Chop 3/4th of the gourd into huge chunks and blend it into paste with turmeric powder.
Grate the remaining 1/4th of the gourd and set aside.
In a wok heat the oil.
Add jeera and let it crackle.
Add ginger garlic paste and let it brown.
Add Chopped onions and saute’ till they start turning brown.
Add tomato and cook till the tomatoes are soft and the oil starts separating.
To this, add red chilly powder and salt and saute till the oil seperates.
Add grated and blend gourd to this, give this a good mix. Add 1/2 water and salt to taste.
Cook till the gourd is cooked and the oil starts separating.
Add garam masala powder and cook further till the oil seperates and the bharta is thick.
Add chopped coriander leaves, sugar and give it a good mix.
Serve it hot with roti.
