KERala Vegetable Stew

Ingredients
1 cup – Mixed vegetables(french beans, carrot & potato)
2 inch – Cinnamon
2 no – Clove
1 no – Cardamom
1 no – Bay leaf
1/2 cup – Coconut milk
2 inch – Fresh ginger
1 no – Medium sized onion
10 no – Curry leaves
1 tsp – Sugar
Salt to taste
2 cups – Water

Preparation
Peel and Slice carrots , potatoes and beans rectangularly. Keep it similar sized.
Slice the onions and ginger.

Method
Heat the water in a deep pan. To this add cinnamon, clove, cardamom, bay leaf, ginger, curry leaves, onions and mixed vegetables. Bring it to boil. Once the water starts boiling, lower the flame and cover with a lid. Let it cook for 8 to 10 mins or till the vegetables are cooked well but still holding their shape.

To this add coconut milk, salt and sugar. Let it boil again for 5 mins. Mash few potatoes to get the stew to a thicker consistency.

Garnish with chopped coriander leaves.

This stew is as light and comforting as easy and healthy it is. Have it as is or with rice or with roti or dosa or appams.
