BANana Berry Muffin

Ingredients
250gma – Self raising flour
2 tsp – Baking powder
110gms – Soft brown sugar
100ml – Vegetable oil
125ml – Milk
2 nos – Eggs, beaten
4 tbsp – Honey
100gms – Blueberries + Strawberries
75gms – Banana, mashed

Method

Preheat the oven to 180°C.
Line the 12 muffin tray with muffin liners or grease it and dust it with flour.

Sift flour and baking powder into a large bowl and mix in the sugar. Combine the oil, milk, eggs, honey and pour over the flour and mix well.

Stir the blueberries, strawberries into the bun mixture and then add the mashed bananas and mix again.

Pour or spoon the mixture into the cake cases and bake for 20 to 25 minutes, or until well risen, firm and golden brown.

    Hi, how can we replace the self raising flour in this recipe? Do we neee to add extra baking powder and soda apart from what is already used?

      Hey Roopal, add 2tbsp baking powder per 100gms all purpose flour. Sift it 5 to 6 times and self rising flour is ready..
