BAKed Potato Hearts

Ingredients
4 nos – Potato, big sized
1/4 cup – Olive oil
Salt to taste
1 tsp – Freshly milled pepper
1 tsp – Rosemary or any herb of your choice

Preparation
.Clean and peel the potatoes. Slice them into 1cm thick slices. Cut them into hearts using a heart shape cookie cutter. Soak them in salt water.
. In a utensil big enough to hold the potatoes , boil water. Enough water for the potatoes to move easily. Add a tsp of salt and a tsp of oil to this
. Line a baking tray with heavy grade aluminium foil.

Method
When the water starts boiling, reduce the flame to low and let the water simmer. Drop all the heart potatoes into the water and par boil them for 3 to 4 mins. Drain them and spread them in a plate and let it cool.

In a mixing bowl take oil, salt, rosemary, pepper and mix well. Add the par bouled hearts to it and let it marinate for 30 minutes.

Preheat the oven to 200°C.

Spread the marinated potatoes on the lined tray and bake it for 20 to 25 minutes.

Carefully flip all the hearts and further bske it for 20 minutes or till the edges turn gold.

Serve it with Mayonaisse or Any sauce of your choice.

    I cannot believe I never thought of that!! And I officially love potatoes! these are simple and pretty and would look so smart for a tea party. Do you have to par-boil them?

      Hey Malvika, it indeed makes a great stylish tea snack…
      Yes it needs to be par-boiled.
