Ingredients
1cup – Butter
3/4 cup – Sugar
1 1/2 – All purpose flour
1/2 tsp – Baking soda
1/2 tsp – Salt
1 tsp – Candied Oranges
Preparation
Powder the sugar in a mixer. Add the candied oranges and pulse it again. Let the oranges be ground coarsley.
And for sugar i have used the excess sugar left out during canding the orange peel, so i have that little more of the Orange flavour.
If you do not have candied orange peel, just use some grated orange rind.
Method
Cream together butter and sugar. Sift dry ingredients together and mix into creamed mixture.
Knead it lightly with your hands.Roll into a ball and wrap it in a cling film. Press it, flatten it and make a disc out of it and refrigerate ( not freeze) for half an hour.
Pre heat the oven to 180°C.
Remove the dough from the fridge and place it in between two layers of clingfilm and roll it to a 1cm thickness.
Cut it using a cookie cutter.
Place on an ungreased cookie sheet. Keep an inch distance between the cookies.Bake for 8 to 10 minutes until lightly browned.
