DUChess Potatoes - Pommes de terre duchesse
 
Ingredients
  • 400g potatoes
  • 1 egg yolk
  • 50g butter, melted
Instructions
  1. Pressure cook the potatoes along with the peel. Cool it.
  2. Preheat oven to 200°C. Line and greese the baking tray with baking paper.
  3. Peel the potato and mash it. Using a large metal spoon, press potato through a fine sieve into a bowl. Add egg yolk and half the butter. Season with salt, pepper and freshly ground/grated nutmeg. Stir to combine.
  4. Spoon mixture into a piping bag fitted with the nozzle of your choice and pipe it the way you desire. Have fun!!!
  5. Drizzle remaining butter over potato. Bake for 20 to 25 minutes or until lightly browned.
