LEMongrass Cake
 
Ingredients
  • ¾ cup - Butter
  • 1½ cup -Sugar
  • 4 nos - Eggs
  • 3 tsp - Baking powder
  • 2 cup - Flour
  • 1¼ cup - Milk
  • 4 nos - lemongrass
Instructions
  1. Chop finely and boil lemongrass in the milk till the flavour gets into the milk. Let the milk completely be infused with lemongrass flavour. Cool it. And take 1 cup from it.
  2. Pre heat oven to 180°C.
  3. Beat egg whites in a very very clean bowl till it is firm.
  4. Seive and mix flour and baking powder and keep aside.
  5. In an other bowl cream sugar and butter. Add egg yolks. Lightly mix flour and baking powder mixture and add alternately with lemongrass milk. Fold in the egg whites in three parts. First two times mix the egg whites well ( lightly ). Third part fold it hently and dont mind if the egg whites dont mix completely. Bake in prepared pan for 45 minutes to 1 hour or till the skewer comes out clean.
