MELting Moments / Eggless Custard Cookies / Melt in the mouth cookies
Serves: 24 cookies
Melting Moments/Eggless Custard cookies are absolutely soft, melt in the mouth cookies. I learnt this fool proof recipe from Masterchef Australia long ago. This eggless cookie is super easy and quick to make and requires only 5 ingredients.
  • 180gms - Unsalted butter
  • 80gms - Icing sugar/Confectioners sugar, sifted
  • 60gms - Custard powder
  • 1 tsp - Baking powder
  • 180gms - All purpose flour
  1. To make Melting Moments/Eggless Custard cookies preheat  the oven to 180°C.
  2. Line two oven trays with baking paper.
  3. Cream butter for two minutes in an electric mixer with paddle attachment.
  4. Add icing sugar and custard powder and mix until combined.
  5. Sift the baking powder and flour together then add to the dough and mix well.
  6. Using a measuring spoon make equal sized balls. I use 1 tbsp.
  7. Place on a baking paper lined baking tray and press each ball with a fork to leave an indent.
  8. Bake biscuits for 12-16 minutes or until  the edges are light golden brown.
  9. Let it cool on the trays for 5 minutes before transferring it to the wire rack.
  10. The biscuits will be very soft as soon as you remove it from the oven. Let it cool and it will harden perfectly.
  11. This biscuit is mildly sweet, if you are a sweet person then you could increase the icing sugar quantity to 100gms.
