THAndai - Holi drink
 
Thandai is a quintessential Holi drink. Thandai is a rich flavoured milk made using spices and ingredients , is perfect when served chilled.
Ingredients
  • 1 ltr – Full fat milk
  • Sugar to taste
  • Below are the ingredients for the masala.
  • 2 Tbsp – Poppy seeds/ Khus Khus
  • 2 Tbsp – Fennel seeds/ Saunf
  • 2 Tbsp - Melon seeds
  • ¼ cup each – Almonds & cashews
  • 1 tsp – Black peppercorns
  • 2 nos – Cardamom
  • 1 pinch – Saffron
Instructions
  1. Powder all the ingredients listed under masala into a fine powder.
  2. In a saucepan heat the milk.
  3. Once the milk boils up, switch off the flame.
  4. Add sugar as per your liking. I like it mildly sweet.
  5. Turn of the gas.
  6. Add 3 tbsp of the masala.
  7. Cover the saucepan and let the milk completely cool.
  8. Refrigerate for at least 4 hours.
  9. Strain the Thandai and it chilled.
