Homemade Elder Flower Syrup
Make Homemade Elder Flower Syrup and serve this aromatic, delicate , delicious syrup with sparkling water, add to wine, top it on yogurt or fruits. Just the name Elderflower has a very exotic feel to it, don't you think? Something very royal, something very fairy tale ish.
  • 2Kgs - Granulated Sugar
  • 10 cups - Water
  • 2 nos - Lemons
  • 20 - Well bloomed Elder Flower Heads
  • 1 tsp - Citric Acid ( optional)
  1. Take Water , Sugar in a big pot and bring it to a boil over medium heat.
  2. Let the Sugar Dissolve.
  3. Add citric acid and boil it for a further 5 minutes.
  4. In the meantime fill another pot with cold water and gently wash the flowers to remove any dust and bugs. Just a gentle swish will do.
  5. Trim the stems and just retain the heads.
  6. Put the lemon slices, elder flower heads in a huge, sterilised jar and pour the hot sugar syrup over it.
  7. Cover it and and let it sit in a cool place for 2 to 3 days for it to infuse, giving it a mix once in a day.
  8. Third day strain the syrup and fill them in bottles.
  9. Mix it up with Sparkling Water or Sparkling Wine , add some lemon slice and Ice cubes and serve chilled.
  10. I am also planning to make some panacotta using the syrup.
