CARrot Paaysa / Carrot Kheer / Carrot Drink
 
Carrot Payasa, is mild drink which can be had hot or cold. Carrot Paayasa is one of the easiest drink to make and every guest we have served it to loves it.
Ingredients
  • 5 to 6 - Carrot, medium size
  • 1 cup - Water
  • 2 cups - Milk
  • 2 to 3 - Cardamom
  • 1 pinch - Saffron (optional)
  • ¼ cup - Sugar (more or less as per your taste)
  • 6 to 8 - Cashews (optional)
Instructions
  1. Soak saffron in the milk and let it soak till you prepare everything.
  2. Clean, peel, chop and pressure cook the carrots along with the water in a pressure cooker till the cooker lets out two whistles. The carrots should be cooked.
  3. Open the lid and let it cool.
  4. Blend the cooled carrots, along with the water into a smooth paste.
  5. Pour this mixture into a deep casserole.
  6. Add saffron infused milk and let it come to a boil.
  7. Add sugar and cardamom powder to this and boil for further 5 mins.
  8. Garnish it with more cardamom powder.
  9. Serve it hot or refrigerate it and serve it cold.
  10. * To make it more rich you could add  soaked cashews or almonds when blending the carrots. Though i like it without them as it is light yet creamy without it also.
